FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and is intended for production of cultured milk bioproduct. Invention consists in production of cultured milk bioproduct with food fibers and dry carbon module by reservoir method by means of addition of lightened beet root fibers in amount of 1.5%, which have previously been dissolved, pasteurised at the temperature of 75°C and cooled down to temperature of 20°C into fermented product at the temperature of 40±2°C and dry carbohydrate module "Lael" in amount of 0.5%, which has been previously dissolved in sterilised and cooled milk, into fermented cultured milk bioproduct cooled down to 14°C prior to pouring.
EFFECT: method makes it possible to expand assortment of cultured milk bioproducts having high organoleptic, physical-chemical and microbiological indices, and also improved biological value and ability for storage.
