FIELD: food industry.
SUBSTANCE: invention can be used for processing seaweed in a food functional semi-finished product with the subsequent preparation of various culinary products from it. The method includes preparing raw materials, heat treatment and packaging the finished product. Heat treatment is carried out by threefold heating in water to a temperature of 85-90°C at the water: laminaria ratio of 2:1. Wherein at the second stage of heating, citric acid in an amount of 0.2-0.25% of the laminaria weight is added in water.
EFFECT: invention allows to obtain a semi-finished food product from laminaria with preservation of biological value, improved flavour indices and extended shelf life.
