FIELD: technology of food products making.
SUBSTANCE: prepared potatoes are treated with preserving solution of two types of salts taken in ratio of 1:1, at temperature of 2-6°C for 50-60 minutes. After that, it is prepacked and packed. Either sodium bisulfite with concentration of 1% and potassium sorbate with concentration of 0.3%, or sodium bisulfite with concentration of 1% and sodium benzoate with concentration of 0.15%, or sodium bisulfite with concentration of 1% and sorbic acid with concentration of 0.5% are used as preserving solution.
EFFECT: invention allows for increasing shelf life of semi-finished products with preservation of natural organoleptic characteristics thereof.
