FIELD: food industry.
SUBSTANCE: method provides for feeding of the first effluent of fillmass of the first crystallisation into vacuum device, its condensation, down to supersaturation coefficient of 1.05-1.07, and introduction of inoculating suspension produced by grinding sugar in isopropanol. Crystal mass is condensed by making up specified effluent into vacuum device until content of CB is 88-90% and content of crystals of 40-45% with size of 160-180 micrometre. Prior to condensation of effluent after introduction of inoculating suspension and prior to discharge of inoculating fillmass from vacuum device, food non-ionogenic surfactant is introduced in amount of 0.001-0.0015 % to weight of fillmass.
EFFECT: reduced amount of merged crystals, reduced coefficient of crystals heterogeneity and acceleration of process.
