FIELD: sugar industry.
SUBSTANCE: method involves collection and condensing syrup with clarification in vacuum device, its condensing and addition of surfactant into vacuum device followed by seeding crystals by addition of a crystalline primer as sugar powder, growing crystals and boiling down massecuite to the required content of dry matters. In the process of selection of syrup foam breaker PG-3 is added into vacuum device as powder in the amount 0.001-0.002% of syrup mass for prevention of foam formation. Syrup is condensed at temperature 76-78°C up to the oversaturation coefficient 1.25-1.35. Seeding crystals is carried out by spontaneous formation of crystallization centers in the amount 5-7 crystals per 1 mm of length of test glass at temperature 70-72°C. Surfactant added into vacuum device before seeding crystals represents distilled monoglyceride as a melt that is taken in the amount 0.001-0.002% of syrup mass.
EFFECT: improved boiling down method.
