SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of cocoa husk by liquid nitrogen with separation of according miscella, yacon cutting, drying in microwave field at specified parametres of process and frying, frying of barley grain, rye grain and acorns. Mixing of yacon, barley grain, rye grain and acorns, impregnation of produced mix with separated miscella with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.
EFFECT: method makes it possible to produce new coffee drink from non-traditional raw materials according to wasteless technology.
