SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of tangerine rind by liquid nitrogen to separate according miscella, yacon cutting, drying in microwave field at the specified parametres of the process and frying. Also barley grain and soya are fried, yacon is mixed with barley grain, chestnuts and soya, produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in the medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials, and also provides for improvement of organoleptic properties of drink due to its enrichment with extractive substances of miscella and their preservation.
