FIELD: food industry.
SUBSTANCE: invention relates to low-calorie fillers (for instance, cellulose, starch, bran, glucans, hydrocolloids) coated with lipid derivative to make the main or inner layer, with further incapsulation of fibre/lipid complex in protein derivative that makes outer layer. In fact, invention provides for the system to deliver edible fibres with controlled moisture absorption.
EFFECT: as a result of incapsulated fibre application according to invention, absorption of water with edible fibre (and also swelling of edible fibre) may be efficiently moderated until incapsulated fibre gets into stomach, and regular digestion processes start.
