FIELD: food industry.
SUBSTANCE: invention is implemented by following. Pumpkin and chicory are rinsed while barbotaging carbon dioxide into rinse water and separately milled and finished to produce a puree. One blends lemon juice, the puree and sugar syrup. The mixture is heated, packed, sealed and sterilised. For preparation of the puree and sugar syrup blending the components are taken in the following proportion (dry matter weight %): chicory 20-21, pumpkin 19-20, lemon juice 10-10.5, sugar 9.5-10, water - balance to 100.
EFFECT: method ensures production of nectar out of unconventional raw materials enriched with biologically active substances and suitable for use in clinical nutrition due to its chemical composition.
