FIELD: food industry.
SUBSTANCE: invention relates to any starch-containing raw material processing. The method envisages raw material milling and mixing with electrically activated water in a bioreactor. The bioreactor is equipped with an electric stirrer, a thermoregulator and an ultrasound device. As a result a suspension is produced and fluidised with amylolytic enzymes at a temperature of 60-65°C and pH equal to 4.5-5.5 during 4 hours. The process is implemented in an ultrasonic field.
EFFECT: invention ensures simplification and acceleration of starch to monosaccharide depolymerisation process and energy expenditure reduction.
