SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. The method of production envisages preparation of the recipe components, cutting oyster plant and rosehips and their drying in microwave field at preset process parametres, frying oyster plant, frying oyster plant, barley grains, acorns, nut kernels, kernels of fruit bones and soya. Then one performs additional drying of the rosehips by convective method, mixing oyster plant, rosehips, barley grains, acorns, nut kernels, kernels of fruit bones and soya and cryomilling of the obtained mixture in liquid nitrogen.
EFFECT: method allows to produce new coffee beverage of non-traditional raw materials according to a nonwaste technology.
