SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. One performs preparation of the recipe components, cutting yacon and pears and their drying in microwave field at preset process parametres and frying. Rye grains and soya are roasted, yacon, rye grains, soya, cocoa husks and pears and mixed in a weight ratio of 4:4:5:5:2 and the produced mixture is cryomilled in liquid nitrogen.
EFFECT: method allows to produce new coffee beverage of non-traditional raw materials according to a nonwaste technology.
