FIELD: food industry.
SUBSTANCE: method of production includes preparation of the recipe components, their cutting, drying in microwave field at preset process parametres, scorzonera cutting and frying. Barley, oat and rye grains are roasted and mixed with scorzonera. One performs extraction of the produced mixture with drinking water at phases ratio of 1:(6-7) at preset process parametres; the produced extract is filtered. The syrup (with dry substances content 23 - 27.5%) is prepared based on the extract; pears and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows to reduce boiled fruits content in the finished product and extend its storage life.
