FIELD: food industry.
SUBSTANCE: method provides for recipe components preparation, scorzonera cutting, drying in microwave field at preset process parametres, frying and milling, frying barley and rye grains, mixing of scorzonera, barley and rye grains, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of pears and syrup, sealing and sterilisation.
EFFECT: method allows to reduce boiled fruits content in the finished product and extend its storage life.
