FIELD: food industry.
SUBSTANCE: method for production of a natural fruit product, packed and stable during storage at room temperature, envisages fresh fruit milling to produce fresh fruit puree. Then pectinmethylesterase enzyme is added to the produced puree which is packaged into an oxygen-proof container. Then the puree is maintained under super-high pressure for natural fruit pectin demetoxilation in the said puree.
EFFECT: invention enables production of packaged fruit puree stable during storage and possessing the colour, taste, aroma and nutritional properties characteristic of fresh fruit.
