FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method of preparing a product comprising a container and a container in a food composition comprising a jelly composition comprising a gelled matrix and optionally fruit, preferably in the form of pieces, that comprises the following steps: (a) providing a heat activated gelling composition comprising a heat-activated aqueous gelling matrix composition and from 0 to 180 by weight of fruits’ parts, preferably in the form of pieces, preferably – from 20 to 90 by weight parts, based on 60 by weight parts of a heat activated aqueous gelling matrix at temperature of T0; (b) heating the heat activated gelling composition to temperature of T1 > T0 for activating the gelling process; (c) cooling the composition to temperature of T2; (d) dosing a certain volume of the activated composition into a container at temperature of T2 to obtain a lower layer; (e) dosing a volume of the other composition into a container to produce an upper layer; and where the heating-activated water gelling matrix agent is that: G'Tf > G'T0, where G'T0 – module of elasticity at temperature of T0 before heating, G'Tf - module of elasticity at a finite temperature of Tf after cooling.
EFFECT: invention makes it possible to obtain a multilayer product that has an excellent soft texture and high quality.
