SUBSTANCE: method involves evaporation of probiotic bacterial culture in a non-allergenic cultural substrate such as peptone and/or protein hydrolysate derived from plants and/or animals. The cultural substrate contains glucose and/or other mono- or disaccharides obtained from hydrolysis of complex polysaccharide. The second version of the method involves enzymatic pre-treatment of the cultural substrate to remove trace amounts of allergens arising from cross- or accidental contamination and growing at least one probiotic bacterial culture thereon.
EFFECT: invention enables to obtain a non-allergenic probiotic culture suitable for making a food product or a pharmaceutical composition meant for persons suffering from Coeliacs disease and especially sensitive to allergenic substances of gluten and/or lactic type.
