SUBSTANCE: invention relates to biotechnology. Non-gluten spore or moldy culture of the Penicillium roqueforti genus for forming blue streaks in cheeses meant for persons suffering from Coeliac disease is obtained by growing in a non-gluten culture substrate. The spore suspension obtained with the substrates additionally undergoes enzymatic treatment. The latter enables removal of trace amounts of gluten from the substrate.

EFFECT: invention guarantees a double safety level, which can eliminate possible risk due to presence of trace amounts of gluten due to cross-contaminations taking place on the entire production chain of the used materials.
