FIELD: food industry.
SUBSTANCE: invention is related to a food product. The food product contains a cocoa-based food matrix including probiotic bacteria coated with a lipid composition. The said composition contains at least one vegetal origin lipid chosen from saturated fats having melting point lower than 75°C where the food matrix contains stearic acid and palmitic acid in an amount of more than 80% of the matrix weight and together with C8-C10-C12 fatty acids and/or compound ethers of fatty acids in an amount of less than 10% of the total weight of the food matrix. The food product manufacture method involves at least the following stages: addition of probiotic bacteria coated with the lipid composition containing at least one vegetal origin lipid chosen from saturated fats heaving melting point lower than 75°C to the melted cocoa-based food matrix to produce a food matrix containing stearic acid and palmitic acid in an amount of more than 80% of the matrix weight together with C8-C10-C12 fatty acids and/or compound ethers of fatty acids in an amount of less than 10% of the total weight of the food matrix; the said food matrix pouring into an indentation having walls at a temperature lower than the melted cocoa-based food matrix temperature, with the matrix consolidation.
EFFECT: invention allows to produce an improved composition as part of a food product; the composition ensures unexpectedly low indices of probiotic bacteria death.
