FIELD: food industry.
SUBSTANCE: invention relates to a method for production of canola 2S protein. The method involves production of canola protein isolate with protein content at least approximately 90% (weigh)(Nx6, 25), preferably - at least approximately 100% (weight) which isolate consists mostly of 2S protein and contains virtually no 7S and 12S proteins. In one aspect canola oilseed flour is extracted with an aqueous salt solution with temperature increased from 70°C to 100°C for extraction of mostly 2S protein from the flour so that to produce canola protein solution containing mostly 2S protein. 2S protein is obtained in the form of isolate. In another aspect canola oilseed flour is extracted first with water for extraction of mostly 7S and 12S canola proteins and then - with an aqueous salt solution for extraction of 2S protein from the flour. 2S canola protein isolate is obtained from the salt extract. In one more aspect canola oilseed flour is extracted with an aqueous salt solution for extraction of 2S, 7S and 12S proteins from the flour. The protein extract aqueous solution is subjected to thermal treatment with temperature increased from 70°C to 100°C for 7S and 12S proteins sedimentation and retaining 2S protein in the solution wherefrom isolate is to be separated. In the next aspect protein solution is concentrated prior to thermal treatment.
EFFECT: invention enables production of canola protein isolate consisting mostly of 2S protein and containing virtually no 7S and 12S proteins.
