FIELD: food industry.
SUBSTANCE: inventions group relates to food industry. The canola protein product has protein content less than 88.98 wt %, preferably - at least 60 wt % (N×6.25), in conversion to dry weight, and contains at least 85 wt % of canola protein 2S and at least 15 wt % of canola protein 7S of the total canola weight, preferably - at least 90 wt % of canola protein and at least 10 wt % of canola protein 7S of the total canola weight. The method includes production of a water solution of proteins 2S and 7S, thermal treatment of the water solution for sedimentation of canola protein 7S or isoelectric sedimentation of canola protein 7S from the water solution, isolation of the sediment of canola protein 7S from the water solution and isolation of the canola protein product having protein content less than 90 wt %, preferably - at least 60 wt % (N×6.25) in conversion to dry weight. The beverage includes the said canola protein product.
EFFECT: inventions group allows to produce a product which is fully soluble within a wide pH range and is capable to obtain transparent beverages enriched with proteins.
