FIELD: food industry.
SUBSTANCE: inventions group relates to food, fodder industry and to aquaculture. The method for production of canola protein isolate, containing protein in an amount of 90 wt % (N×6.25) in conversion to dry weight, involves canola oilseeds flour extraction at a temperature of 5°C with generation of a water protein solution with protein content equal to 5 - 40 g/l and pH equal to 5 - 6.8, the water protein solution separation from waste flour and subsequent stages in a specified sequence depending on the method version: the water protein solution concentration increase up to 50-250 g/l combined with simultaneous maintenance of the solution ionic strength, diafiltration, calcium salts addition to the concentrated protein solution till the solution electrical conductance is equal to 15 - 25 mS, sediment removal, the clarified concentrated protein solution dilution using 2 - 20 volumes of 2°C - 90°C water, the diluted solution acidification up to pH being 2.5 - 4.0.
EFFECT: inventions group allows to manufacture a product that is soluble in water at low pH and has a low content of phytic acid.
