FIELD: food industry.

SUBSTANCE: invention relates to production of canola protein isolate and its application in aquaculture. Production method of canola protein isolate involves extracting flour from canola oil seeds so to induce solubilisation of the protein in this flour from canola oil seeds and making an aqueous protein solution with protein content between 5 and 40 g/l and pH between 5 and 6.8. Then the aqueous protein solution is separated from the residual flour from canola oil seeds. Then protein concentration is raised in this aqueous protein solution to at least 50 g/l at the same time maintaining the solution ionic strength which is stable by means of selective membrane technology to obtain concentrated protein solution. Then the concentrated protein solution is dried so to produce canola protein isolate with the protein content of 90 wt % minimum (N×6.25), with preference to have 100 wt % minimum in dry matter. For this the specified canola protein isolate has canola protein profile that includes between 25 and 55 wt % of canola protein 2S, between 45 and 75 wt % of canola protein 7S and between 0 and 15 wt % of canola protein 12S, preferably includes between 40 and 50 wt % of canola protein 2S, between 50 and 60 wt % of canola protein 7S and between 1 and 5 wt % of canola protein 12S.

EFFECT: invention enables to produce canola protein product characterised by a high protein efficiency ratio.
