FIELD: food industry.
SUBSTANCE: invention relates to meat industry, in particular - to production of intestinal casings fabricated of all types of beef intestinal casings and intended for production of sausage products, semi-products, hams and other products. The raw material is represented by sections of beef round casings, middles and bungs. The raw material is salted with subsequent maintenance to provide for draining for moisture content in the raw material to be no more than 40%, cut into strips at least 60 cm long and stitched together with overlocking four-ply overseam to produce casings that are individually preserved by way of dry salting, batched and packaged.
EFFECT: invention allows effective usage of raw materials that previously was unfit for production of intestinal casings intended for production of sausage products, semi-products, hams and other products.
