FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and can be used for moisture removal process intensification. Removal of moisture from liquid dairy products proceeds under vacuum conditions. Moisture removal proceeds in two stages. At the first stage the product is heated to (15-20)°C under a residual pressure of (5-10) kPa and condensed till dry substances content is (40-50)%. At the second stage the product temperature is increased to be (25-30)°C with residual pressure reduced (2-3) kPa with removal of moisture proceeding till weight fraction of moisture in the dry product is no more than (4-5)%.
EFFECT: invention enables to reduce dehydration process energy intensity by (20-25)% due to the whole of the drying process proceeding within the same apparatus, to increase the moisture removal rate by a factor of 2-3 and to produce a dry product with enhance solubility properties.
