FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. The composition contains prime grade wheat flour, medium rye flour, sugar-sand, creamy margarine, food chicken eggs, cocoa powder, vanillin, edible salt, a carbon-ammonium salt, sodium bicarbonate, peanut kernels and chocolate glase. The components are used at the following ratio wt %: prime grade wheat flour - 18.53, medium rye flour -18.62, medium rye flour for sprinkling -2.74, sugar-sand - 15.15, creamy margarine - 21.83, food chicken eggs - 4.86, food chicken eggs for greasing -1.36, cocoa powder - 0.93, vanillin - 0.02, edible salt - 0.15, carbon-ammonium salt - 0.04, sodium bicarbonate - 0.04, peanut kernels - 9.44, chocolate glase - 6.29.
EFFECT: invention allows to produce short pastry characterised by reduced prime cost and energy value, increased food value; invention also allows to extend the range of short-paste goods produced using rye raw material.
