FIELD: food industry.
SUBSTANCE: invention is related to food industry and may be used in other industry branches for paste-like products fluidisation as well as in beekeeping. In accordance with this method a container with honey is fixed in an inclined-and-tilted position with crystallised honey simultaneously treated with electromagnetic microwave radiation and 25 - 75 kHz frequency ultrasonic vibrations in such a way that a zone of simultaneous impact of the radiations is created located on the honey mass open surface. Thus, rapidly exposed layers of crystallised honey are produced providing for the possibility of further simultaneous radiations impact thereon and preventing overheating which is dangerous for honey quality. The device for the method implementation contains a framework, mounted whereon are appliances for the honey container fixation and a microwave generator unit with a radiator represented by a circular waveguide. The said circular waveguide is designed in the shape of a short-circuited section of a multimode waveguide providing for energy vibrations that have no longitudinal component along the waveguide surface. The microwave radiator waveguide open end is capable of attachment to the honey container, its short-circuited end represented by a disk radiator of ultrasonic vibrations. Between the disk radiator and the waveguide wall there is an resilient element installed serving for the ultrasonic radiator acoustic decoupling and simultaneously ensuring the device electromagnetic tightness.
EFFECT: invention enables honey dissolution process performance enhancement, energy-intensity reduction and sanitary-and-hygienic labour conditions improvement.
