FIELD: engines and pumps.
SUBSTANCE: extruder comprises body, auger with drive, shaping head with die and fabricated conic burnisher arranged with the possibility of axial displacement and control of rotation direction and speed with the help of coaxial shafts. Conic burnisher is fabricated of three parts. The second and third parts according to direction of product travel are arranged in the form of truncated cone. Taper angles of die internal surfaces and side surfaces of three burnisher cones are selected so that values of stepped gaps between internal surface of die and external side surfaces of three burnisher cones have shape of narrowing conic annular channel. On external side surfaces of three burnisher cones, double-threaded groove of alternate depth is provided.
EFFECT: improved quality of protein textures due to deeper thermomechanical action of rotary burnisher cones at food vegetable raw materials, which makes it possible to produce product with specified extent of destruction.
