FIELD: technological processes.

SUBSTANCE: invention relates to equipment for extrusion treatment of food products and production of protein texturates from food plant raw materials. Extruder comprises body, auger with drive, moulding head with rotary conical mandrel. Besides mandrel consists of three pairs of serially arranged conical and cylindrical parts. On surface of first conical part along production motion there are channels arranged having rectangular section of alternating depth as expanding and bent relative to hour hand. Behind the first conical part of mandrel there is the first cylindrical part, on surface of which there are two rows of triangular ledges arranged, besides triangular ledges are facing each other. On surface of second conical part of mandrel there are rectangular channels of alternating depth arranged as bent according to hour hand that gradually narrow. Behind the second conical part of mandrel there is the second cylindrical part of mandrel arranged, on surface of which there are rhombic ledges arranged in staggered order. On surface of further located third conical part of mandrel there are rectangular channels of alternating depth arranged as bent according to hour hand that gradually narrow. Behind the third conical part of mandrel, on surface of which there are rhombic ledges arranged in staggered order with pitch that is higher than on the second cylindrical part of mandrel. At the same time rotary mandrel has the possibility to make oscillating axial motions along axis of extruder with specified frequency due to the fact that at the end of mandrel shaft there is a replacement guide block profile made, which interacts with thrust roller, at the same time height of replacement guide block profile determines amplitude of mandrel oscillations.

EFFECT: improved quality of produced protein texturates, due to deeper thermal mechanical effect of rotary mandrel at food plant raw materials, which makes it possible to produce product with specified extent of destruction.
