FIELD: food industry.
SUBSTANCE: infusion of raw material having a porous resilient structure is produced by way of extraction in the alternating pressure pulse pulsation mode with subsequent filtration. Prior to alternating pressure pulse pulsation a layer of raw material limited by the perforated plates in the extractor is maintained during 2-3 days till complete saturation. Raw material saturation proceeds in a water-alcohol mixture with alcohol concentration 47% (vol), duty of water being (1:5)-(1:7). After saturation the raw material layer is treated with alternating pulses, pressure amplitude being equal 3.8-6.3 kPa and generated during 10-60 sec which is followed by depressurisation to a pressure value equal to that of the saturated raw material condition. Pressure pulse treatment periodicity is 17-130 sec.
EFFECT: invention enables enhancement of extractive elements retrieval from raw material having a porous resilient structure combined with reduction of infusion production time by a factor of 1,2-1,4.
