FIELD: food, pharmaceutical and cosmetics industry. SUBSTANCE: invention deals with methods of extraction of vegetable and fruit and berries stock. Stock extrusion is carried out in rotor-pulse apparatus in clearance between stator and rotor with speed gradients lying in range 3,4•105 - 6,9•103m/s by means of water and alcohol mixture with concentration of ethyl alcohol 50-70% at room temperature under water consumption per unit of time and area from 1:2.5 to 1:12. Stock can be treated in presence of succinic acid in the amount of 0.3-0.7 wt.% of stock. EFFECT: intensified process of extraction, enhanced degree of recovery of extractives. 2 cl, 1 tbl
