FIELD: food industry.
SUBSTANCE: raw materials are milled, infused in a water-alcohol solution in two stages under conditions of pulsed pneumatic stirring with compressed air. Exhaust air is delivered into an alcohol trap where alcohol and flavouring substances are captured. The water-alcohol solution enriched with the flavouring substances is mixed with washwater obtained after the first washing of the spent raw materials and mors. Washwater after the second washing of raw materials is mixed with the water-alcohol solution for fresh raw materials pouring.
EFFECT: invention allows to reduce the process duration, increase extractive and flavouring substances content in alcoholised morses, reduce alcohol consumption and produce mors with high physical-and-chemical and organoleptic indices.
