FIELD: food industry.
SUBSTANCE: invention relates to methods for manufacturing baked natural fruit and vegetable chips in the form of plates. The vegetable chips contain the following ingredients (in terms of dry substances weight): 10% - 16% of modified starch, 20% - 30% of rice flour, 5% - 15%" oof oatmeal, 20% - 30% of potato flakes, at least 14% of vegetables, less than approximately 3% of corn oil, less than approximately 4% of water. The vegetable chips contain the following ingredients (in terms of dry substances weight): 10% - 16% of modified starch, 15% - 25% of rice flour, 5% - 15% of oatmeal, 15% - 20% of potato flakes, at least 20% of fruit, less than approximately 3% of corn oil, less than approximately 4% of water. The total acceptability score of the vegetable and fruit chips is at least 6.5 against a 9-point scale, with at least 60 customers polled during the method application.
EFFECT: invention enables production of vegetable and fruit chips that have a light crispy structure similar to that of potato chips.
