FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. The method for production of a product based on cereal crop flakes envisages mixing cereal and dry fruit and berry components with an encapsulating viscous hydrophobic additive, stirring the composite mixture with a hydrophilous binding agent (heated up to 60-100°C) and a sweetener, pressing the ready mixture till initial sheet formation, modification of the initial sheet structure ensuring plasticity by way of compression or stretching, flattening, levelling and cooling of the modified sheet, cutting products of the specified size. According to the invention the product contains (at a ratio of kg/100 kg): oat flakes and/or rye flakes and/or barley flakes and/or wheat flakes - 20-80, hydrophobic component represented by fats of vegetable origin - 3-30, fruit and berry recipe components - 3-50, sweetener - 1-20 and hydrophilous binding agent - 4-30.
EFFECT: method allows to extend storage life of the product based on cereal crops without chemical components utilisation, to preserve nutritive properties, plasticity and to ensure a high level of the product organoleptic properties.
