FIELD: food industry.
SUBSTANCE: invention relates to food industry. One mills fruit, berries and vegetables or mixture thereof and squeezes out the liquid fraction preserving the adducts at a temperature no more than 35°C. From the liquid phase one extracts protein by way of the adducts sedimentation with ions of a group 2 divalent metal while mixing the liquid phase with a water-soluble salt of a divalent metal selected from the group including calcium, magnesium and zinc which salt is taken in an amount of 0.01 - 1.00% of the fraction weight. The produced compound is thermostated for a period from 0.5 minutes to 10 hours at a temperature of 0 - 70°C. The chilled sediment is separated and dried.
EFFECT: invention allows to produce a food product having enhanced food value.
