FIELD: food industry.

SUBSTANCE: biomass production method envisages yeast assimilation under conditions of aeration in a nutritional medium containing a carbon source, mineral salts and microelements and characterised by the following chemical elements content (mg/l): N2 300-700, P 20-150, K+ 100-800, Fe++ 7-15, Mg++ 10-30, Zn++ 0.5-5, Mn++ 0.5-2 with subsequent separation of the target product. The yeast is represented by Saccharomycopsis fibuligera ("ВСБ"-12) All-Russian collection of industrial microorganisms Y-2173 strain. The carbon source is represented by a starch-containing vegetal raw material having undergone alkaline treatment with ammonia water with ammonia content = no less than 25% taken in an amount of up to 0.1 m3 per 1 t of the finished product. Alkaline treatment is performed at a temperature of 65-75°C, pH = 6.0-7.0 during 3-3.5 hours under conditions of excess of iron and phosphorus ions. The product yield is equal to 50-72%, protein content is equal to 37-56%.

EFFECT: method allows to manufacture the target product with high yield of protein content.
