FIELD: food industry.

SUBSTANCE: method relates to food industry and may be used for manufacture of food products of vegetal raw material, in particular, for preparation of coco-nut pulp chips. The method involves uniform beating of the whole peel surface till a heavy sound is to be heard, making puncture holes in at least two seedbuds throughout the whole pulp thickness, removal of juice through the above holes, peeling, cutting pulp into 0.5-2 mm thick slices, their portioned delivery into a rotary drum, heating the slices by convective and contact methods till chips production during a period of time (determined according to the following dependence: τ=m·k·0.01·t, where τ - heating period, min; m - portion weight, kg; k - empirical coefficient equal to 0.415 for the minimum slice thickness value, 0.430 for the maximum slice thickness value; 0.01 - empirical coefficient; t - heat carrier temperature, °C, cooling the chips and packing the ready product.

EFFECT: invention usage will allow to improve organoleptic properties of the chips.
