FIELD: food industry.
SUBSTANCE: invention relates to a non-preserved food product based on vegetal juice and/or milk containing viable probiotics in a stable concentration generating a savour and/or gas in parent matrix of the food product. The food product production method envisages addition of 1-50 g/l of a weak monoatomic food acid into a matrix based on vegetal juice and/or milk, the product pH conditioning to 3-4 pH and addition of viable probiotics represented by DSM9843 Lactobacillus plantarum or DSM 1-2845 Lactobacillus plantarum at preset concentration. The produced product may be stored at a temperature of 0 - 15° C preferably at 4 -10° C.
EFFECT: one proposes a non-preserved food product based on vegetal juice and/or milk containing viable probiotics in a stable concentration.
