FIELD: food industry.
SUBSTANCE: invention refers to the methods of curing substances solution preparation in production of semi-finished and finished products, mainly made of refined biomass the content of which includes water inserted artificially. The invention can be used in curing of meat, fish and seafood, mainly first refined, as well as in production of vegetable food. The method includes preparation of curing agents curing solution based on sodium chloride with alkaline reaction of medium using cavitation treatment. The solution media is food phosphates solution. Their mass to mass of other curing agents of sodium chloride ratio amounts to 0.07-0.18.
EFFECT: invention allows reducing energy costs, ensures saving of main material due to increase of its water-retaining power and improves taste and flavor of food produced.
