FIELD: food industry.
SUBSTANCE: method envisages usage of cavitationally treated saturated solution of sodium chlorine and ice produced from water treated in "РКУ" in the technological process with subsequent degasing and freezing in the ice generator; cavitation treatment is performed in an ultrasound cavitation reactor with a piezoceramic transducer with the reactor performance equal to 5-6 l/min, the reactor operation power being within the range of 45-500 W/l.
EFFECT: invention allows to improve the taste background, enhance the ready product environmental friendliness degree resulting from reduced content of sodium chloride and food additives, for example, phosphates.
