FIELD: food industry; meat industry.
SUBSTANCE: method provides for preparation of pickle, mixing it with meat and keeping it pickled. The pickle is treated by excitation of cavitation in it. As a pickle solvent they use a low-mineralized water fraction, received in the diaphragm electrolyzer cathode space.
EFFECT: increase in quantity of pickle water bound by meat.
