FIELD: process engineering.
SUBSTANCE: invention relates to method and device for foam production to be used in food industry for producing foodstuffs with low content of fat. Foam features controlled distribution in sizes of gas bubbles in liquid matrix. Proposed device comprises porous membrane with controlled pore sizes and distance between pores to provided for uniform gas bubble size distribution, gas pump to force gas through porous membrane that forms gas bubbles and rotary element that moves nearby membrane surface to cause additional flow to separate, accumulate and entrap gas bubbles in liquid matrix.
EFFECT: foam with gas bubbles of identical size and uniform distribution of gas bubbles sizes.
