FIELD: food industry.
SUBSTANCE: invention relates to food industry. The stable foam contains a liquid matrix, gas bubbles and a structure-forming agent The structure-forming agent includes two interacting components. The first component contains a thermally, physically-and-chemically or mechanically pre-treated polyether of glycerine and fatty acids (PGE) and is present in an amount of 0.1 - 2 % of the liquid matrix weight. The second component contains unetherified fatty acids and is present in an amount of 0.1-2 % of the liquid matrix weight. The stable foam production method envisages addition of a crystalline compound (possessing amphiphilic properties and containing PGE) to a deionised polar liquid at pH being 6-8. Then, during heating, one adds a swelling substance containing unetherified fatty acids (FFA) to the polar liquid at a temperature of 65-95°C during 20-85 sec. The solution is homogenated under a pressure of 125-225 bars at a temperature nearly 60-95°C for dispersion of a lamellar and/or bubble cellular structure. Then the solution is cooled to a temperature lower than 10°C during 4-20 hours; one ensures air bubbles in the solution by means of a beating mechanism or by way of passing the solution through porous membrane.
EFFECT: invention allows to manufacture a product stable during storage under room temperature conditions and with a structure resistant to temperature changes.
