FIELD: food industry.
SUBSTANCE: invention relates to food industry. The composition with viscosity within the range of 15 - 250 mPa*s contains from nearly 2 to nearly 10 wt % of denaturated milk proteins in terms of milk solids non-fat (MSNF) of the milk components, from nearly 15 to nearly 80 wt % of a carbohydrate- and/or non-carbohydrate-based sweetener in terms of sugar equivalent, from nearly 0.35 to nearly 1.50 wt % of a carbohydrate-based stabiliser and an acidifier in quantities required for the said base composition pH to be equal to from nearly 3.0 to nearly 3.8. The method versions allow to produce the composition. Acidified milk-based beverage production method involves dilution of one part of the composition with 2-7 parts of water using a beverage filling machine.
EFFECT: inventions group allows to produce a long-keeping base composition and a stable beverage produced by way of dilution with water, having suitable viscosity ensuring free pumping over dispensing equipment.
