FIELD: food industry.
SUBSTANCE: aerated cultured product of mare's milk contains (in ripened mare's milk) biomass of a lactobacillus strains consortium including Lactobacillus acidophilus NKJC strain, Lactobacillus acidophilus JCH strain and Lactobacillus acidophilus KZSh24 strain in a total quantity of 104-1010 CFU/ml, their ratio in terms of CFU being 2:1:1 or biomass of a lactobacillus strains consortium including Lactobacillus acidophilus NK-1 strain, Lactobacillus acidophilus 100 H and Lactobacillus acidophilus KZSh24 strain in a total quantity of 104-1010 CFU/ml, their ratio in CFU being 2:1:1, where content of histamine is equal to 800-2000 mcmol/l, of vitamin C is equal to 120-135 mg/l, of vitamin A is equal to 240-300 mg/l, of vitamin B1 is equal to 360-390 mg/l, of vitamin B2 is equal to 330-370 mg/l, of vitamin E is equal to 850-900 mg/l and of carbon dioxide is equal to 0.2-0.4 wt %.
EFFECT: invention allows to ensure histamine level equal to no more than 2000 mcmol/l with optimum compromise of pleasant organoleptic properties and content of useful cultured milk product ingredients.
