FIELD: food industry.
SUBSTANCE: fat filling or paste consists of solid particles suspension in a continuous fatty phase containing at least one sweetening substance in an amount of less than 45 wt %, defatted dry cocoa powder in an amount of less than 3 wt % (preferably - less than 1 wt %), fats content equal to 23 - 38 wt %; the fat filling or paste specificity is as follows: it contains milk powder and/or powdered milk derivatives and/or dry starch and fruit powder in an amount of 3 - 20 wt %; the fruit powder has D90 less than 500 mcm and water content less than 8 wt %, content of milk powder+powdered milk derivatives+dry starch is equal to more than 25 wt %. Additionally the invention relates to a method for production of the said fat filling or paste and its application in food products.
EFFECT: inventions group allows to improve quality and nutritive value of the produced filling.
