FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. A preserving agent in an amount of 0.8 mg - 1 g per 1 kg of the product is introduced into the product preserved. The preserving agent is represented by a betulin-containing birchbark extract, its composition being as follows, wt %: betulin - 65-71, lupeol - 12-16, betulin 3-O-caffeate - 5-15, related substances -balance up to 100%.
EFFECT: invention allows to extend storage life of preserved products with lower fat content.
