SUBSTANCE: invention relates to dairy industry. Method of preserving milk and milk products involves introduction into milk or subject to preservation of milk emulsion of beeswax based on milk or cream as a preserving agent in amount of 1.0, or 1.25, or 1.75–3.0 g/l (kg) of milk or milk product.
EFFECT: invention allows to prolong storage life of products, as well as to ensure neutralization of nitrates and nitrites in the product and improve its quality.
