FIELD: food industry.

SUBSTANCE: invention relates to food industry. According to the proposed method one subjects an egg mass to the impact of an electromagnetic field of ultra-high-frequency range in an additional resonating chamber with volume equal to 0.5 - 2 litre, intensity amounting to10-29 kV/cm, till the temperature inside the product is equal to 30 - 32°C and one proceeds with cooling to 20°C. The impact occurs in a repeated cyclic mode. Additionally one proposes an installation containing a UHF generator with a basic resonating chamber with low intensity of electric field; installed inside the chamber is an additional resonating chamber with high intensity of electric field; the latter chamber is filled with a fluoropolymer and is rigidly fixed to the wall of the basic resonating chamber with a lateral side having a hole for the magnetron radiator. A fluoropolymer pipe-line is laid through the bases of the additional resonating chamber and the walls of the basic resonating chamber. The fluoropolymer pipe-line is looped via a pump and nipples for the product input and output and is placed into the shell-and-tube heat exchanger for the cooling liquid to circulate in the annular space.

EFFECT: inventions group ensures reduction of bacterial population of egg mass at a low temperature of pasteurisation.
