FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages preparation of recipe components, cutting part of bulb onions, sunflower flour pouring with drinking water and maintenance for swelling. One mixes the listed components with tomato paste, drinking water, sugar, black hot pepper, allspice, cloves, coriander and laurel leaf. One proceeds with the mixture cooking and addition of acetic acid to produce a sauce, carrots and the remaining bulb onions cutting and sauteing in vegetable oil, brined cucumbers cutting, the listed components mixing to produce garnish. Then herring is cut, maintained in salt solution, mealed in wheat flour and fried in vegetable oil; the herring, garnish and sauce are packed, sealed and sterilised.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
